DamascusLab is an independent culinary cutlery research publication focused exclusively on Damascus steel kitchen knife sets. We publish in-depth metallurgical guides, hands-on product reviews, and buyer comparisons to help home cooks and professional chefs make informed purchasing decisions.
Our editorial team draws on knowledge across materials science, professional culinary arts, and precision metrology. We do not manufacture or sell knives. Our Evaluation Criteria
Every Damascus knife set reviewed on DamascusLab is evaluated across the following standardized dimensions:
1. Edge Sharpness (BESS Score)
We reference the Bess Edge-On-Up sharpness measurement scale (grams of cutting force). Lower scores indicate sharper edges. A score below 100g is considered surgical; 100β200g is razor sharp; 200β300g is working sharp. Where BESS scores are cited, they represent industry-standard reference values for the relevant steel type and edge geometry.
2. Rockwell Hardness (HRC)
Rockwell C scale hardness is the primary indicator of edge retention and chipping resistance. Values are sourced from manufacturer specifications and industry standard data for the relevant steel alloys (e.g., Takefu VG-10, Aichi AUS-10V). We cross-reference multiple sources including Takefu Special Steel technical datasheets and academic materials science publications.
3. Steel Alloy Composition
Chemical composition data (Carbon, Chromium, Vanadium, Cobalt, Molybdenum percentages) are sourced from official steel manufacturer datasheets where available. For VG-10: Takefu Special Steel Co., Ltd. technical specifications. For AUS-10V: Aichi Steel Corporation product data. Where exact figures are unavailable, we note that values are approximate.
4. Edge Retention
Edge retention is assessed qualitatively through real-world cutting comparisons between steel grades, informed by published research on carbide microstructure and abrasion resistance. We use CATRA-equivalent cutting media references where noted.
5. Construction & Build Quality
We assess handle material quality, bolster construction, full vs. partial tang, layer count verification, and fit-and-finish based on publicly available product specifications, user community reports, and professional knife reviewer consensus.
6. Value & Price Analysis
Prices are verified at time of publication from the primary retailer. Price comparisons are made against category competitors at similar specifications. We note when prices may fluctuate.
The DCI Score (Damascus Cutlery Index)
Our proprietary Damascus Cutlery Index (DCI) Score out of 100 is a weighted composite rating calculated from the six evaluation dimensions above:
